Cuba is the largest island in the Caribbean and offers plenty of guided tours. However, I made my arrangements while in Cuba, and you can as well. I met friendly people, many of whom cycle themselves, and saw cars from the 1950s still in operation. There will be warm weather and fabulous beaches, but quaint villages to explore as well.
